give thanks

i love thanksgiving.

it's the beginning of the holiday's for me.

it's family time, and great food.

i love it!

we had a wonderful time this year with my sister's family.

we did dinner at 1:00 a.m.,

game night and appetizers at 7:00 p.m.,

and black friday at 9:30 p.m.

it was so much fun!

for grandma

we had a wonderful saturday!

we cleaned up the house,

went to costco,

had lunch at a park,

went on a drive,

and visited grandma and grandpa.

while on our visit with grandma, she reminded me to post my chickens halloween pictures.

my little 18 month old chicken loves them!

summer salad....?

yes,...i know it's actually fall.

but here in the central valley

it's still HOT!!

i still have some straggler tomatoes, and basil in my garden.
(my basil is actually gone...i used the last of it for this salad)

so, i wanted to share this amazing salad with you!

i got this recipe from my mother in law.

it's nutritious.

flavorful, and pretty!

dressing:

1/2 c. olive oil

6 tbls. balsamic vin.

1 tbls. fine chopped shallots

1 tsp. dijon mustard

1.2 tsp. sugar

1/2 tsp. salt

salad:

5 small red potatoes

2 ear of corn

5 roma tomatoes

1/2 c. feta

chopped basil

dash of balsamic

boil red potatoes until fork tender.

remove, slice and lay flat in 9X13.

put 2 ears of corn in the same water you used for the potatoes.

boil 5 min.

cut corn off of stalk.

lay on top of of potatoes.

slice 5 roma tomatoes sprinkle with sea salt.

lay on a paper towel to absorb the juices.

lay on top of corn.

pour dressing on top.

sprinkle with feta, sliced basil, and a dash of balsamic.

serve chilled.
