this is my first time making this AMAZING zucchini cake i found in my Martha Stewart Living magazine, we had our first day of school/preschool, and our first day of dance!
first off, if you planted zucchini i'm sure you are burned out on them and have probably done every recipe under the sun. well, this cake is super delish and super easy... it might just be a new recipe to add your collection! i think this would be great for a brunch or wonderful for dessert with really good vanilla ice cream!

i asked my little chicken if she would miss me...with a pause she said "no". i told her that was completely all right and that i was excited for her to start "big girl" preschool! my boy's were ready to get back into the swing of things and were sick of being under mom's thumb all day!
this is our first year doing dance! there are 2 very special things about this first that i love. she is dancing in the same dance school and building i danced in, and she is dancing with her best friend/cousin. bee and i are thrilled and can't wait to see them do their first performances!

zucchini bundt cake with
orange glaze
1 1/2 sticks unsalted butter, melted, plus more for pan.
2 1/2 c. flour
2 1/2 tsp. baking powder
1/4 tsp. cinnamon
1/8 tsp. course salt
2 medium zucchini
3 large eggs
1 1/2 c. sugar
1/2 tsp. graded orange zest
1 tbls. fresh orange juice
1. preheat oven to 325
brush bunt pan with butter and dust with flour.
tapping out excess.
2. whisk together flour, baking powder,cinnamon,
and 1 tsp. salt.
3. grate zucchini. squeeze out excess water.
4. stir together eggs and sugar, then stir in melted butter,
zucchini, orange zest, and juice.
stir in flour mixture. transfer batter to pan.
5. bake until toothpick come out clean.
about 1 hour.
let cool 10 min.
remove from pan and let cool for 30 min.
6. brush several layers of orange glaze evenly over cake.
orange glaze
1.1 1/4 c. confectioners sugar
2. 1/4 tsp. finally grated orange zest
plus 3 tbls. of orange juice
3. whole milk, as needed, for thinning.
whisk together sugar,orange zest, orange juice.
if the mix is to thick add milk 1 tsp. at a time.
