i still have some straggler tomatoes, and basil in my garden.
(my basil is actually gone...i used the last of it for this salad)

so, i wanted to share this amazing salad with you!
i got this recipe from my mother in law.
it's nutritious.
flavorful, and pretty!
dressing:
1/2 c. olive oil
6 tbls. balsamic vin.
1 tbls. fine chopped shallots
1 tsp. dijon mustard
1.2 tsp. sugar
1/2 tsp. salt
salad:
5 small red potatoes
2 ear of corn
5 roma tomatoes
1/2 c. feta
chopped basil
dash of balsamic
boil red potatoes until fork tender.
remove, slice and lay flat in 9X13.
put 2 ears of corn in the same water you used for the potatoes.
boil 5 min.
cut corn off of stalk.
lay on top of of potatoes.
slice 5 roma tomatoes sprinkle with sea salt.
lay on a paper towel to absorb the juices.
lay on top of corn.
pour dressing on top.
sprinkle with feta, sliced basil, and a dash of balsamic.
serve chilled.
